When perusing food blogs, I find myself constantly drawn to bright orange recipes, whether it involves carrots, pumpkin, squash or sweet potatoes. The rich colors scream “fall flavor” to me so I decided to pick a soup that sounded particularly tasty and give it a shot. This recipe was actually quite simple and just required a bit of prep work (lot’s of peeling and dicing, which I don’t mind since it gives me the chance to practice my chopping skills). This rich, savory soup has a ton of flavor and won’t end up stuck to your thighs after eating it, a huge bonus for soup lovers like me. Serve with a toasted french baguette, a crisp green salad or a hearty grilled cheese sandwich and enjoy!
