When I get home from work at night, the name of the game is quick and easy meals. To avoid resorting to frozen dinners, I’ve gotten a little creative with cooking for myself while keeping things simple. This pizza can be made on flatbread (pictured) or pita bread and can be adjusted to fit whatever tastes you have. I can’t wait to play around with the ingredients in the future by adding different sauces and fresh fruit. Here is my basic recipe for an easy (and healthy) flatbread pizza.
Heat oven to 425 degrees
Spread marinara sauce over whole wheat flatbread, leaving a 1/2 inch border
Sprinkle with part skim shredded mozzarella cheese
Add mushrooms, basil and turkey pepperoni slices
Bake for 8-10 minutes
Makes the perfect personal-size pizza that’s excellent served alongside a fresh side salad.
